Tomato + pesto focaccia (V and VG!)

Hello friends and happy March!

We woke up to a chilly 26 degrees this morning here in the PNW, and I can honestly say that one large cup of coffee is not going to cut the mustard today.

So, while that 2nd cup is brewing, I thought I might share a quick and delicious little meal I made this week with you.

Once the garden is overflowing with fresh basil and tomatoes, I will be making this or a version of it a few times a week for lunch. Or a light dinner.

I am always looking for a way to load a meal with vegetables in new and creative ways. I like a huge salad as much as the next person but I do grow tired of the same old combinations. Being a creature of habit, I find myself making the same things until they grow bland and I am bored with them.

Food should be fun, enjoyable, easy, and healthy right? That is exactly what I was hoping for when putting together a filling yet nutritious lunch this week for Troy and I to enjoy together before getting back to our tasks.

I found some focaccia at the grocery store this week that looked very good. I usually like to keep some on hand for a quick snack or side dish, and finding some with no cheese in or on it was perfect since I am allergic to Dairy. However, this recipe is FLEXIBLE so if you love your dairy, load it on my friend!

I cut the focaccia in half, and lengthwise so it made 6 nice sized pieces. Using my favorite homemade pesto recipe you can find here- Minimalist Baker, she is wonderful. I use walnuts and much less water than the recipe calls for since I like the pesto to be fairly thick for meals like this. Spread the pesto generously on the focaccia, add cut up artichokes (canned in water) red onion, sliced roma tomatoes, and a sprinkle of vegan mozz over the top. Using my air fryer on the air fry setting, I toasted the bread and sprinkled a handful of cut up arugula when they were toasty and the cheese was melting.

So this is really less of a recipe and more of an ode to vegetables, eating food that tastes good, and spending a bit less time in the kitchen.
