Thanksgiving Mac and Cheese Recipe | Donna from A Little While

You know how people are always saying that there wasn’t enough food at Thanksgiving Dinner?  
And how your Thanksgiving pants are still loose even after the feast is over?  
And how everyone goes home hungry?

Yah.  Me either.
We added Mac and Cheese to our Thanksgiving Dinner menu our first ‘married’ Thanksgiving.  We were hosting.  I wanted to dazzle.  

I have brothers.  

Brothers like to eat.

Brothers like to eat Mac and Cheese.

I found the perfect recipe, and perfected it even more. (Who doesn’t like more butter?)

Thanksgiving Mac and Cheese

1 stick of butter
1/4 cup flour
1 cup milk
8 oz. Velveeta, cut into small cubes
2 cups elbow macaroni, cooked
1/2 cup shredded cheddar cheese
1 sleeve of butter crackers, like Ritz, crushed

Heat oven to 350.

Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Cook and stir 3 to 5 min. or until thickened. Add Velveeta cubes; cook 3 min. or until melted, stirring frequently. Stir in macaroni.

Pour into 8×8 glass dish, sprayed with cooking spray; sprinkle with cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.

Bake for 20 minutes.

The year my family came for Thanksgiving, I doubled the recipe and put it in a 9×13 baking dish, which was all but licked clean after dinner!  The next day I made it again, but added chopped leftover turkey.  It was so good!
